Semolina Pudding with Chocolate Sauce

I'm on a diet.

I hate to tell it coz whenever I say to myself that I'm on a diet I eat much more pastry, dessert, and such snacks.

However this time I have to say that I'm on a diet, and I have to keep it tight. I want to be thinner like how I was 2 years ago to look better in the wedding dress! I have almost 2 months left, do you think that I can manage? To lose 10 kg.s (about 20-22 pounds I guess)? In two months? We'll see...

On the other hand I cannot keep my sweet-tooth in patience. I can give up eating anything but not desserts! So I'm looking for desserts which contain less sugar & flour. This means that I need rather milky recipes.

Last week I tried an old/traditional semolina pudding and liked it. Unfortunatelly I forgot to take it's photo, but I guess I'll cook it again next week ;)


Oh btw :D I was listening to this while cooking. It helps losing extra calories lol



Semolina Pudding Squares with Chocolate Sauce

Ingredients

for pudding

9 tbsp of semolina
9 tbsp sugar
1 litre (about 4 cups) milk
a pintch of mastic gum (if desired)

for sauce

200 ml (a bit less than 1 cup) milk
200 ml (a bit less than 1 cup) water
2 tbsp of cocoa powder
3 tbsp of cornstarch
4 tbsp sugar
Freshly grated lemon peels.

Method

1) Mix all pudding ingredients in a medium sauce pan , place on heat. Keep stirring. Cook it until it gives bubbles on surface and thickens.
2) Moist a 20cm/8inches square pyrex pan with water. Pour the pudding into the pan, let it cool, and chill in the fridge.
3) Grate 1 lemon peel. Mix all sauce ingredients in a clean sauce pan, add the lemon peel. Place on heat, keep stirring and cook it until it thickens.
4) Pour the sauce over the semolina pudding, and put back to fridge until it gets chilled. (For 2-3 hours, and over a night is the best.)
5) You can serve it cutting into squares.


Note: If you use mastic gum in the pudding, crash it into powder, and add to milk.

You can lose weight if you restrict desserts to a minimum and walk a lot!
The pudding is very tasty but..I know isn’t easy - I'm dessert-guy too ;)

Yes such exciting times.

I started having daily walks last week, and going on well. There has been strong south-east winds for the last 3 days in Istanbul so it was a bit hard to walk at the coast, but fortunatelly it stopped with rains tonight.

Tomorrow will start early in the morning at the coast and without desserts :)))

Hi bal, I never knew you posted ok Saturday - strange - I look all the time. Blogger goes weird on my phone sometimes. I just wrote a comment and the browser shut down & I lost it (sigh!)

Have you tried artificial sweetener? Does the though of of male you cringe. I use it alot. It keeps the calorie count down and it's better for your teeth too.. and I bet if you made a desert using it no one would know the difference.

Erm, what else did I say? Yes, exercise early to raise your metabolic rate each morning for the day ahead. It's what determines how fast the calories/fats will be burned. The rate is low or slow in the morning.

Glad to hear you're walking :) Perhaps a look on a map for a more sheltered route. The wind takes the fun out of of all doesn't it.

Hi!!

Wish I had a chance to take different route. The place I live is different dear. In fact city plan of Istanbul is different. When I say the coast I don't mean a sideside town... Just as same as city center. Don't think as same as your town/village or area.

If I don't walk at the coast then my only chance is to have a walk on avenues lol.

But I'm not complaining. I love walking at the coast as sports. With a wonderful view. Fresh sea weather. A bit away from sounds and dirt of cars.

I've never used sweeteners dear. I'm not sure if I would use. Could have a try though.

Dearest Bal... Don't worry about weight loss. As for me I was 50 kg before I met my hubby LOL Then after I tasted all the sinful pastries, I added 2 kgs in 2 months time! BUT... he didn't bother at all because he hate to see me starved just to look good for him. It's no point to do so, if it's for the sake of clothes and him (but I want to buy easily clothes off the rack and who said no women wanted to look her best beside her bf/hubby if not better?) He said if I shed the weight but put it on later, all the slim clothes would go to waste (Huh?)Also weight goes along with age,genetic and exercises (even vaccuming the whole house works!) Your health is more important (which bride doesn't want to look most beautiful,huuh?) and to do that you need to eat moderately carbs but add lots of fresh fruits and vegetables. I eat lots of seaweed (yep those kelps, hijiki, nori) which helps in weight control.

After having children, women put on lots of weight too. As in my case, I lost some of my baby fat after I controlled my diet (seaweeds-lots of them but don't eat them if you're allergic to MSG. Seaweeds contain natural MSG or in japanese word Umami)

But the best of all my hubby still loves me LOL even I'm a little chubby before. He doesn't want to sleep with a skeleton! Don't worry ok? Most important, you are happiest and confident in your wedding day.

lol Pixen! Thanks a lot for your encouragement dear :) I'm not willing to lose eight to please him but also myself dear :D

Oh and we decided it to be on spring, so the big day gonna be on May. This mean that I have 4 months more haha :D
