We were invited to my dad's aunt for dinner last thursday. I hadn't seen her for ages that it was a nice family time to me. I wanted to bring a gift to her but couldn't find something more suitable than my simplest but the most delicious cake. It was such a treat after her wonderful dinner party.
I had done this cake five or six times this year, and last year. It's easy to prepare, and can go with any appetite with different garnishing.
Ingredients:
1 layer of a package of ready sponge cake*
22cm (9inches) round cake tin
parchment (to line)
1 cup sour cherry (seeded ~ fresh or frozen but drained)
80 gr bitter chocolate (chopped coarsly ~ I prefer with 70% cocoa)
400 ml milk (a bit less than 2 cups)
2 egg yolks
1/3 cup flour
1/4 cup sugar
3 tbs butter
200 gr cream cheese (or mascarpone or labna)
1 small package of tartelette jelly* (to glaze)
Method:
1. Line cake tin with parchment, and place the single layer of the cake as shown in the picture.
2. Mix milk, sugar, egg yolks and flour in a medium pan, and cook a thick cream (like pudding) stirring constantly till it boils.
3. When the thick cream boils take it over the oven, add 3 tbs of butter, stir well, and set aside to cool for 1-2 min.s
4. Finally add cream cheese, stir till the mixture combines well smoothly.
5. Spread half of the cream onto the cake. Sprinkle chocolate chunks, and cover with the rest of the cream.
6. Garnish the surface with sour cherries. Prepare the tartelette jelly as it is described on it's package, and pour over the cherries.
7. Chill in the fridge for at least 4-5 hours or over night.
notes: I couldn't take any photos of the cake when it was served but I added pictures of the previous cakes below.

As you can see you can use any kinds of berries or even pineapple chunks in this cake.
And in stead of chocolate pieces you can use fruit after the first layer of cream again.
